These scrumptious chocolate cupcakes with vanilla frosting are a deliciously indulgent treat!
They’re so easy to make as well! Impress your friends with these cupcakes. The two contrasting colors of yummy chocolate cupcakes with vanilla frosting, as if layered with a snowy peak will be a real eye catcher!
The ingredients you will need are:
- 110 grams of Butter or you can use Margarine
- 110 grams of caster sugar
- 2 medium sized eggs
- 75 grams of self raising flour
- 25 grams of dark cocoa powder
To create the vanilla frosting you will need:
- 110g softened butter or margarine
- 320g icing sugar, sieved
- Approx. 2 or 3 tablespoons of milk
- Approx. 2 or 3 drops of vanilla extract
Start off by pre-heating the oven to around 180 degrees Celsius or approximately 350 degrees Fahrenheit/gas mark 4. Next get the butter and slowly mix it together with the sugar. Try to cream them together so they are mushed up nicely. If the butter is really hard it may take a while to mix it up. But the more you mix the more malleable the butter will be and will blend with the sugar much more easily. Try using a fork for this step.
Next in the same bowl start adding the eggs and beat them into the mixture. Add some flour if the mixture starts to curdle. Then finally finish off folding all of the flour into the mixture slowly, little by little. Once that’s done, its time to add all of the cocoa powder, once again fold this into the mixture and make sure its distributed evenly.
Now get your cupcake cases and place them onto a metal tray which should be oven proof. Spoon the cake mixture into each case and set them into the oven. Now bake the for around 15 to 20 minutes, making sure to check they not left in there too long and start burning. One way to check if the cupcakes are done is to pierce one with a clean knife. If the knife comes out clean again then the cakes should be cooked all the way through.
The cakes should have risen nicely once you’ve taken them out of the oven. Next place them on a cooling rack or just leave the tray on a heat proof surface so it can all cool down. Whilst these scrumptious chocolate cupcakes are cooling its time to make the vanilla topping.
To create the the frosting for the chocolate cupcakes, beat 110 grams of butter and slowly add the sieved icing sugar into it. Do this slowly making sure to only add a little at a time. At this point the mixture should look nice and creamy and really smooth. To finish off add some milk, only a few tablespoons as you see fit. This is used to loosen up the frosting a bit. Then add a splash of vanilla extract. Now whisk this all up again, and there you have the vanilla frosting.
Time to spoon the frosting onto the chocolate cakes. Add as little or as much as you want. Make sure the chocolate cakes are cool before doing this though, otherwise the frosting will drip down and melt. Feel free to use a piping bag to make the frosting sit on the chocolate cupcakes with a bit more finesse. Either serve these scrumptious chocolate cupcakes with vanilla frosting as is, or top it of with sprinkles. For a little more indulgence why not sprinkle some dark chocolate shards on top, or even crumble on some honeycomb pieces!
